For the purposes of this report, the contract catering market is defined as food service management, or the provision of food in a location by outside caterers. Traditionally, contract catering was mainly the domain of industrial work places, where canteens had to be provided for by employers due to government legislation. However, the privatisation of public sector services has resulted in a substantial expansion in the variety of locations where contract caterers are now found.

This report concentrates on the main sectors of contract catering, such as:

  • business and industry, comprising staff catering and including government and agency locations
  • education, including both state education, such as schools, colleges and universities, and independent schools
  • healthcare, including NHS and trust hospitals, private hospitals and private nursing homes
  • catering for the public, e.g. in shopping centres, department stores, transport terminals and special events
  • public sector, such as the MoD, law courts, police and fire service, town hall staff, and prisons
  • remote sites, including oil rigs, training centres and construction sites.

There has been an increasing trend of facilities management companies to provide contract catering services. However, as such services are often bundled with other services and are provided under one facilities management contract, it is not always possible to analyse the value of the catering aspect of such contracts. Therefore the value of such facilities management contracts may not be included in this report.
